Main Meal Veganized......... Raw Walnut Taco Meat #Recipe

So..... going vegan hasn't come super easy to us as I have my many "comfort" foods that I dearly miss. Nachos, Tacos, Burritos, yummy dip and more. OH I love me some Mexican food! I started with just cutting out meat and substituting with beans but it just isn't the same. I tried the fake vegan meats and they are okay but processed. Overly processed. I longed for a more natural approach to my taco meat......here I bring you Walnut taco meat :)

This is seriously the easiest thing ever!! I buy raw walnuts in bulk from Whole Foods- they have no salt and have not been roasted. I wouldn't recommend any other kind but raw.

The walnuts will need to be soaked for 4-8 hours to soften. This also helps break down the acids making the nuts easier to digest and absorb the minerals. Soaking all nuts including cashews and walnuts is a great way for kids to eat them! 

*Just water high enough to cover the walnuts and a pinch or 2 of sea salt. *

After the walnuts have soaked 8 or so hours, drain and rinse. Grab your supplies: Braggs aminos, Cumin, lemon, and chili powder.

I simply pulsed them in the food processor with a half lemon and 2 squirts of Braggs, and the seasonings to taste. You can do a taco seasoning packet if you'd like. I just kept tasting it till I got it where I liked. I also added red pepper to mine as I like my taco's hot!! 

VOILA! I use the walnut taco meat in raw tacos, salad's and in my Vegan 7 layer dip!! Stay tuned for that recipe sure to trick all your Superbowl party guests!!

My little ones like it on their Mexican salad best! Yummy topped with guacamole, black beans and spicy vegan sour cream!!

Sounds tasty! What's Braggs? and what are you using for vegan sour cream? Also, have you tried the dried TVP? It's not the greatest meat substitute, but it can be used in tons of things.

That looks like the real thing. I couldn't eat hamburger meat when I was pregnant with my son years ago and wish I knew about this!
