The Super Bowl is coming, and much to the dismay of Taco Bell I am going to bring veggies. If you have not heard....Taco Bell basically said bringing veggies to the party was a cop out. Well- I tend to like my veggies so I am sharing my Vegan 7 layer dip to inspire you to bring a veggie dish to the party!

I am a big dip girl. I love dips.......so bring on the chips for this 7 layer dip 100% Vegan of course and really with like 9 layers.
You have to start by making the guacamole first...........
My husband thinks cubing the avocado is the best way to get it all out in perfect little chunks. If we were making a sandwich it would be perfect- but it really doesn't matter when you are going to mash it all up. :)
Supplies needed: Lemon Juice, Chili powder, garlic, red pepper, tomatoes, onion, salt, and pepper.
I mash 3/4 of the avocado and leave the rest chunky. I like my guacamole chunky personally. Then I add a half of lemon juice, sprinkles of seasonings, tbs of garlic, and last but not least the tomatoes!! I usually have to keep sprinkling seasoning until it is where I like it(more chili powder does the trick).
Okay- back to the dip starting on the bottom layer.
1- Refried Beans *Be sure they say vegetarian on them or they have lard.
2- Black beans
3- Fabulous Walnut Taco meat * You can get the recipe here*
4- Spicy Sour Cream - I just bought Tofutti sour cream and mixed in cumin, chili powder, and red pepper. You could just mix in a taco seasoning pack.
6- Lettuce and Onion
7- Tomatoes topped with chives!!
After the pictures I of course added shredded Vegan mexican cheese and the camera died. So you could add that too- maybe along with salsa and cilantro! We like ours cold but most people would heat the first 3 layers :)
