The only thing we love more than football, is Mexican food. We are taco fanatics and pairing some really great tacos with football, is a match in heaven! Our family loves getting together for games and cheering on our favorite team (even if we don’t agree). Besides the great company and entertainment, the food is a great reason to have a football get together! As a vegetarian, I am usually excluding in many of the dishes and it breaks my heart to miss out on game day tacos. Today, I am joining in and whipped up some great Old El Paso taco boats topped with fresh Avocadoes from Mexico!

I was sooo excited to whip up some taco boats…my husband wouldn’t let me make little flags to make taco sailboats! Party pooper! Knowing that not everyone would be down to try out my amazing quinoa- the kids helped me make some delicious guacamole!
I know must people say “My guacamole is THE best“…but they can’t be the best because mine already is. Seriously….delicious chunky goodness! Starting off with soft ripened Avocados from Mexico, is a great way to ensure you nail it! This is sooo easy you guys that I am just listing it below!
2 ripe avocados ( You want brown on the outside and medium squishyness)
1 small onion
2 small tomatoes
1/2 tsp minced garlic
salt and pepper
Red pepper if you like it hot
- Smash avocados, mix seasonings/onions/and garlic, and then fold in tomatoes.
I thought about making a video with a music mix of WOP, but instead it would be GUAC GUAC. Hilarious. I knew the guacamole would be the perfect side dish to the Mexican Quinoa Taco Boats using the Old El Paso taco boats ( Click here to check them out and grab a coupon!)
If you have never tried quinoa or say you don’t like it….it’s probably because you didn’t cook it right 😉 You can check out our “Berry Berry Quinoa Breakfast” recipe for a how to cook quinoa post, and it’s a great sweet recipe using RED quinoa. For this spicy quinoa, we went with tri-color quinoa. They all have a different taste- some more earthy than others.
We started with Old El Paso taco boats that we scored BOGO on with this coupon~ CLICK HERE FOR COUPON~ and considering Old El Paso is on sale at Publix ALL the time….I printed a few more to stock up next time they go on sale! Cooked up some quinoa, heated up my little boats, and topped with some fresh tomatoes and Avocados from Mexico.

The Old El Paso taco boat had all the seasonings needed to whip these up! All the other ingredients were easy to find at Publix including the quinoa- in the rice section!
- 1 cup quinoa
- 1 box full size Old El Paso taco boats
- seasoning packet from taco kit
- sauce pack from taco kit
- 1 bag organic frozen corn (or 1 can )
- 1 can black beans
- 1 green pepper
- 1 onion
- lettuce, tomato, and avocado
- Cook quinoa according to directions on package. Once cooked, mix in green pepper, onion, seasoning packet (no water added), sauce packet, corn and rinsed black beans. Heat up taco boats, and add lettuce in bottom of boat.Using an ice cream scooper, place 1 scoop quinoa mix in boat and then top with tomatoes and avocado! We drizzled chiptole ranch on ours but you can top with anything you want!
